Bailey Pequin-(Capsicum annuum)-The Bailey Pequin pepper also known as the NuMex Bailey Pequin pepper is a Bird type that was developed by Anton Bailey a vegetable specialist who helped work on this pepper project at New Mexico State University. The purpose of this breeding project was to develop a Pequin type that was productive and easily harvested. Since Pequin types are small the labor cost to harvest them was too much. So NMSU went about the task of breeding a Pequin type that could be machine harvested. The Bailey Pequin type will almost fall off the plant when ripe so much easier to machine harvest. NMSU also helped with creating the machine that was made for this very purpose. The NuMex Bailey Pequin peppers grow pointing up and ripen from green to red. They are just under a half inch in length and a quarter inch in width. The heat level ranges from 30,000 to 60,000 SHU and it has an upfront burn. The flavor has been described as smokey sweet or nutty depending on growing conditions. The Bailey Pequin chile plants grow over 6 feet tall and are extremely productive.
