Aji Amarillo (Capsicum baccatum)- The Aji’s are a family of peppers mostly native to Peru, Ecuador and Chile. They can be chinense, baccatum or annums. The annum varieties tend to have upfront heat while the others have flavor first with heat at the back end. Used extensively in South and Central American cooking they have a chinense type fruity flavor but much lower heat. The chiles ripen slowly from green to orange. The peppers can get over 6 inches in length and over an inch wide. They have a nice fruity flavor and good heat. The heat is close to a Cayenne pepper. They are often found dried in the Peruvian market but are great for grilling and stuffing since they are so large. If you grow in a container use 15 gallon and up because the Aji Amarillo chile plants will get over 6 foot tall and will have to be staked.
