Aji Ayuyo-(Capsicum bacattum)-The Aji Ayuyo pepper is an heirloom pepper from Peru. It is so beautiful as it looks like an Amethyst jewel. They look like elongated light purple jellybeans. They then turn light orange and finally red when fully ripe. The flavor is like a wine grape. Sweet but a subtle sweetness with a medium heat level. The chiles are very juicy. They are used is sauces, fresh salsa and seasoning for soups and stews. The plants are very bushy and extremely productive. The Aji Ayuyo chile plants grow over 4 feet tall.
