Aji Cachucha-(Capsicum chinense)-Aji Cachucha are native to Cuba and Puerto Rico. This dark red type hails from Cuba. It has mild heat and is sweet. Used as a seasoning pepper in rice and bean dishes. Also used to season soups and stews and can be stuffed with small amounts of meats and cheeses. Although the latter is not really used in Cuba as very few people can afford meats and cheese there. The Aji Cachucha has a round shape looking almost like a bonnet or toy top. Sometimes will come to a point at the bottom of the pod. The Aji Cachucha chile plants grow 3 to 4 feet tall.
