Aji Colorado-(Capsicum baccatum)-Aji Colorado is grown throughout the countries of both Bolivia and Peru in South America. They are so sweet and fruity that they are compared to having the sweetness of a pure sweet pepper. The heat level is average to medium jalapeno heat. They ripen from green to red and are about 1/2 inch wide by 4 to 6 inches long. So full of flavor they can be used in salads, stir fry and salsas. The Aji Colorado chile plants grow over 4 feet tall and need to be staked or caged because they get so full of chiles.
