Aji Crystal-(Capsicum bacattum)-Aji Cystal also known as Aji Cristal are native to Curico, Chile in South America. They produce waxy looking pendant pods 3 to 4 inches long and 1 inch wide. The Aji Crystal peppers ripen from green to pale yellow and finally an orange red. When yellow the heat is lower and the flavor has more citrus tones. Later they get more smoky fruity and have a high medium heat. In Chile the peppers are roasted, stuffed with meats and cheese, used in soups and stews and marinades for braised meats. They are traditionally used to make a simple salsa called Pebre. Pebre is Chopped Aji Crystal, garlic, cilantro, bit of tomato and oil and vinegar. Its is often served along side bread, butter with meals at restaurants. The Aji Cristal Chile plants grow between 3 to 4 feet tall.
