Aji Guayana-(Capsicum baccatum)-The Aji Guyana pepper is actually from Guyana which is a small South American country on the eastern border of Venezuela. The Aji Guyana peppers have a good medium heat level and a nice citrus fruity flavor. They average 6 to 8 inches in length and close to an inch in width. They ripen from green to yellow and are extremely productive. They are one of the faster growing large Capsicum baccatum types. The Aji Guyana chiles are great for roasting, fresh salsa, salads and dried seasoning powders. The Aji Guyana Chile plants grow over 4 feet tall and need staking because of abundance of chiles they produce.
