Bulgarian Carrot-(Capsicum annuum)-The Bulgarian carrot pepper is native to Bulgaria and southeastern Europe. They are also called “Shipkas” or “Hot Carrot” peppers. They start out green and ripen to a vivid bright orange color. The Bulgarian Carrot peppers are 2 to 3 inches long and are very productive. The flavor is very fruity but they come on fast with a burst of heat at the end near the level of a Cayenne. The Bulgarian Carrot chiles are excellent for fresh salsas, stir fry and grilling. They have a very crunchy texture that makes them a good choice for pickling as well! The Bulgarian Carrot chile plants grow to about 18 inches tall and are very compact so they are ideal to grow in a container.
