CaJohns Serrano-(Capsicum annuum)-The Cajohns Serrano pepper also known as the NuMex Cajohn Serrano was developed and bred by the Chile Pepper Institute at New Mexico State University. It was named to honor John Hard. John is my friend, but he is also the most awarded Independent saucemaker ever in the world. But for those that love chiles he has been a donor, board member and supporter of the Chile Pepper Institute at New Mexico State University for many years.  He has a love for the chiles, chile culture and people whose lives are touched by the chiles. This man deserves all our respect as he truly champions the chile! I hope people name more chiles after him because he has given us a Legacy that cannot be measured in dollars and cents! So much research that has been done on chiles to help the farmer would not have been done without his help. The Cajohns Serrano pepper is much wider and longer than all Serrano chile types. It can get as thick as an average Jalapeno and up to 4 inches long depending on growing conditions. The heat is average Serrano heat and the flavor has fruity tones as it ripens to red. It is extremely productive and can be used for poppers, pickling and salsa. The Cajohn’s Serrano chile plants grow up to 4 feet tall.
