Chile De Arbol Baja-(Capsicum annuum)-The Chile de Arbol pepper is used widely throughout Mexico and is sold mostly dried. They are similar to Cayenne as they have a quick upfront heat. This is the one native to Baja, Mexico. They are found growing commercially at a farm called Ejido which is south of Guerrero Negro. The Chile de Arbol Baja peppers average under a half inch in diameter and are 4 inches in length. They are used as a seasoning for salsa, soups, stews and all-purpose seasoning. They range in heat from 30,000 to 60,000 Scoville units depending on growing conditions. These are a bit milder than the ones grown commercially. They have fruity and nutty flavor notes. Some will say smoky. Some Mexican stores do sell them fresh while still green on occasion. The Chile de Arbol Baja chile plants can grow over 5 feet tall.
