Chile De Arbol-(Capsicum annuum)-The Chile de Arbol pepper is used widely throughout Mexico and is sold mostly dried. They are similar to Cayenne as they have a quick upfront heat. The Chile de Arbol peppers average under a half inch in diameter and are 3 to 4 inches in length. They are used as a seasoning for salsa, soups, stews and all-purpose seasoning. They range in heat from 30,000 to 60,000 Scoville units depending on growing conditions. They have fruity and nutty flavor notes. Some will say smoky. Some Mexican stores do sell them fresh while still green on occasion. The Chile de Arbol chile plants can grow over 5 feet tall.
