Chile De Comida-(Capsicum annuum)-The Chile de Comida pepper is a another vanishing pepper from the southern region of Mexico. The Chile de Comida chile ripens from green to dark red and averages 3 to 4 inches in length and just under an inch close to the stem. Like other chiles native to this region they are usually dried and used to make salsas and traditional mole style sauces. They have a good medium heat level that hits quick but fades fast and fruity nutty flavor tones. We are losing chiles like these because of commercial varieties being grow and native ones leaving the local markets. Understand that Mole is a great sauce but each type of native chile changes it’s flavor. How boring it would be just to have one flavor of Mole sauce or any sauce!! The Chile de Comida chile plants grow over 4 feet tall and are very productive.
