Chile De Onza-(Capsicum annuum)-The Chile de Onza pepper is a dark brown chile from the Oaxaca region of Mexico. It is not as popular as the Chilhuacle Negro which is used also to make dark chocolate style Mole sauces. The Chile de Onza however has more fruity notes. Peppers are not very consistent in shape. Some will be smooth, and some will have little ribbing making it look like a pumpkin. They ripen from a very dark green to a dark brown. And once brown will get a leathery texture and dry up on the vine. It is possible that this is a smaller variant of the Chilhuacle Negro pepper. The Chile de Onza chile plants grow over 4 feet tall.
