Chilhuacle Amarillo-(Capsicum annuum)-The Chilhuacle Amarillo pepper is a rare variety from Oaxca, Mexico. There are two other varieties in that region that have a similar name. The Chilhuacle Negro (Brown) and the Chilhuacle Rojo (Red). These three peppers make up the heart and soul of Oaxacan cooking especially when making Mole dishes. The Chilhuacle chiles are used dried as the outer skin is thin and tough. The Chilhuacle Amarillo has a very sweet citrus like flavor with smoky undertones. The fruit grows over 2 inches in diameter and over 2 inchesĀ long resembling a small squash. It ripens from dark green and then develops burnt orange highlights. They are good for seasoning and sauces. Also make a fantastic pepper powder! The Chilhuacle Amarillo chile plants grow up to 4 feet tall.

The Chilhuacle chiles should be roasted and peeled first as the outer skin can be a little tough. The Chilhuacle Amarillo has a citrus like flavor with smoky undertones. The fruit grows approximately 3 inches in diameter and over 3 inches long. The peppers have a small squash shape. It ripens from dark green to a dark burnt orange. They are ripe once you see a bit of coloring over the dark green. The heat level is close to a Jalapeno. They are used dried foe seasoning, sauces and mole sauces. The Chilhuacle Amarillo chile plants grow up to 4 feet tall.
