It is know for a famous black and white photograph by Ansel Adams and also a painting by artist Georgia O” Keefe. Depending on growing conditions the Hernandez chile will get a little bit larger than the Chimayo. It also matures slower to red than the Chimayo. The heat level is a bit hotter than Chimayo and other native types. The Hernandez chile is very durable and produces well even in harsher conditions. It is best roasted while still green. The flavor gets more rich when red and dried. The Hernandez chile plants grow just over 2 feet tall.
