Maria Elena-(Capsicum annuum)-The origin of Maria Elena comes from my friend Lee who lives outside of Espanola, New Mexico in San Pedro. Maria Elena is a larger variant of the Alcalde chile. Lee for many years did selective breeding from Alcalde to produce a larger version. Then he named it after his dear wife! Like Alcalde the chiles have a very smooth skin and the flavor is full but heat is mild. There are fruity raisin flavor tones. The Maria Elena pepper can grow up to 12 inches long which makes it the largest of Northern New Mexico native types. The Maria Elena chile plants grow over 3 feet tall.

”At Refining Fire Chiles we isolate our seed production plants to avoid cross-pollination with other chile species. If you want to grow your own chiles, you can purchase seeds right here, or full plants (April-July) and have fresh chiles by September.
