Negro De Valle-(Capsicum annuum)-The Negro De Valle chile comes from the mountains of Northern Chihuahua, Mexico. It is one of two chiles that are said the be the best chiles used to make the famous Mexican beef dish called Chile Colorado. The other being Vallero. The Negro De Valle chile has chocolate earthy tones with some sweetness similar to pasillas or anchos but different. The Negro De Valle pepper ripens from green to brown and averages over 1 inch wide and 6 to 8 inches in length. They are sweeter when green but richer when brown. Like other Native chiles you can roast green but use dried when ripened. The Negro De Valle chile plants grow 3 to 4 feet tall.
