Nu Mex Joe E. Parker-(Capsicum annuum)- This variety was named after Joe Parker a graduate student of New Mexico State University. He originally selected seeds from a single plant from a field of New Mexico 6-4 peppers. It was chosen for it’s extra thick flesh and productivity. After years of selection and breeding this hatch type was released under his name in 1990. The Joe E. Parker chiles grow to 8 inches in length and range between 2,000 to 4,000 SHU in heat. They are used in salsas, stuffed, roasted and of course green and red chile sauces. The Nu Mex Joe E. Barker chile plants grow up to 30 inches tall and are very productive.
