Nu Mex Sandia-(Capsicum annuum)-This is a much smaller pepper than the Nu Mex Big Jim or Joe E. Parker pepper. It was developed by Dr. Roy Harper in 1956 by crossing a Nu Mex #9 with an Anaheim pepper. It produces pepper 5 to 7 inches long that ripen from green to scarlet red. It has a much higher heat than the Big Jim and is usually eaten red. The Nu Mex Sandia chiles are thin walled and therefore used more dried or as powders for seasoning and sauces. the Nu Mex Sandia chile has a heat level of 7,000 SHU. The Nu Mex Sandia Chile plants grow just over 2 feet tall.
