Onza Amarillo-(Capsicum annuum)-The Onza Amarillo pepper is another pepper vanishing from Oaxaca, Mexico. This is happening throughout Mexico and other countries because farmers are being offered more money to grow commercial chiles which means they abandon the Native chiles. The Onza Amarillo chile is at a high medium heat level but has a citrus sweetness flavor tone. Used traditionally fresh in salsa but sold in the markets dried as a seasoning for local sauces like mole. The Onza Amarillo chiles average about a half inch in width and just under 3 inches in length. They ripen from green to golden yellow. The Onza Amarillo chile plants grow over 4 feet tall.
