Tabasco-(Capsicum frutescens)-The Origin of Tabasco peppers is of course Tabasco state in Mexico. However some say it may be from another region of Mexico or even Central America. It is known for its use in the famous Louisiana pepper sauce when combined with salt and vinegar. The Tabasco plants produce tons of tiny tapered fruits about 4 cm in length that point upwards on the plant like other Capsicum frutescens varieties. They ripen from green to orange and finally red. The Tabasco chile has fruity tones and a heat level of 30,000 to 50,000 SHU. The Tabasco Chile plants are very compact and bushy and grow to an average height of 4 to 6 feet.
