Vallero-(Capsicum annuum)-The Vallero pepper comes to us from the Buenaventura valley located in the State of Chihuahua, Mexico. It is one of two chiles that are said the be the best chiles used to make the famous Mexican beef dish called Chile Colorado.  The other being the Negro de Valle chile. The Vallero chile has chocolate earthy tones with some sweetness similar to pasillas or anchos but different. The Vallero pepper ripens from green to brown and averages over 1 inch wide and 5 to 6 inches in length. They are sweeter when green but richer when brown. Like other Native chiles you can roast green but use dried when ripened. The Vallero chile plants grow 3 to 4 feet tall.

At Refining Fire Chiles we isolate our seed production plants to avoid cross-pollination with other chile species. If you want to grow your own chiles, you can purchase seeds right here, or full plants (April-July) and have fresh chiles by September.
